Because these capsules were given an arbitrary expiration date that has now passed. The manufacturer printed the short date because, frankly, they were new and inexperienced. They gave all the bottles a one year expiration date and learned later that the product can last for years. It is still in perfect condition. I've cracked open these capsules and both smelled and tasted them. They still taste as fresh as new. The real expiration date is still a couple of years ahead.
How is this possible?
For a lot of reasons. First notice the glass jar. That's the first sign of quality. It indicates a manufacturer who cares enough to spend the extra money to buy and ship glass. It signals their commitment to quality in a supplement world where plastics abound. Next, notice that the glass is tinted a dark amber color to keep out light. Then, inside the bottle you will find---not one---but two packets. One is an oxygen absorbant and the other is a moisture absorbant. Most supplements just have one. On top of that the bottle is sealed with an impregnable foil wrap that locks the bottle down immediately after all the oxygen is flushed out with nitrogen.
As if this wasn't enough, there is one more final stage of protection. The capsule itself is a subpackage that wraps the powder in a protective jacket. What's more, it is a vegetarian capsule made from cellulose. Do you get the idea that this product is expensive to make? It truly is. In fact the manufacturer lost a lot of money making this product. So the half price deal is pretty special and it is a one-time offer while my supply lasts. I can't think of a more convenient way to take a high quality wheatgrass when travelling.

Grown on organic farmland in cool, Northern California with seaweed fertilizer. No animal manure is ever used. The harvested grass is washed in ozonated water at 36 degrees F. Then it is juiced in a custom stainless steel juicer at 33 degrees F (about 1 degree Centigrade), so no oxidation can occur For wheatgrass, every 56 ounces of juice dries down to one ounce of juice crystals. Freeze drying is the most sophisticated and expensive drying method. Unlike spray drying which involves air, heat, and starch as a carrier agent, freeze drying goes from liquid to solid (the crystals) without ever going through the gas stage. The drying takes place in a vacuum. By bypassing evaporation, the juice is never exposed to the deteriorating effects of oxidation, so it does not loose any volatile compounds. The unique manner in which this living juice is dried, at below freezing temperatures, captures, preserves, and protects all of the fresh characteristics. The goal here is to preserve its bioactivity. The crystals are very delicate. Any vibration reduces their size. A full bottle of these juice crystals may look like a half full bottle by the time the UPS truck delivers it. It is still the same 20 grams, but like snowflakes, the crystals are fragile and the more vibration, the more their size reduces to a finer powder. To maintain the crystalline structure, the factory has chosen not use their sophisticated automated powder filling equipment to avoid the vibration it imparts. This product holds four organic certifications: USDA, QAI (Quality Assurance International), EU, and Soil Association (in the UK), plus it is kosher certified.
